  • 2 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced sweet potatoes
  • 1 cup chopped kale
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the onion and garlic, sauté until translucent.
  4. Add the carrots and sweet potatoes, cooking for about 5 minutes.
  5. Stir in the quinoa, vegetable broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover, simmering for 15 minutes.
  7. After 15 minutes, add the kale and cook for an additional 5 minutes until the quinoa is fluffy and the vegetables are tender.
