A comforting and hearty casserole made with seasonal winter vegetables, perfect for warming up during the cold months.

Ingredients

  • 2 cups butternut squash, diced
  • 2 cups Brussels sprouts, halved
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine all the diced vegetables.
  3. Add minced garlic, thyme, rosemary, salt, and pepper to the vegetables and mix well.
  4. Pour the vegetable broth over the mixture and stir to combine.
  5. Transfer the mixture to a greased casserole dish.
  6. If using, sprinkle shredded cheese on top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and the top is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other seasonal vegetables like parsnips or sweet potatoes.
  • This casserole can be made ahead of time and reheated.
  • For a vegan option, omit the cheese or use a dairy-free alternative.
