A nutritious and hearty warm lentil salad that combines the earthy flavors of lentils with fresh vegetables and a zesty dressing.

Ingredients

  • 1 cup green or brown lentils
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Rinse the lentils under cold water and drain.
  2. In a pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add bell pepper and carrot to the skillet, cooking until softened.
  5. Stir in the cooked lentils and cherry tomatoes, mixing well.
  6. Drizzle with balsamic vinegar, and season with salt and pepper. Stir to combine.
  7. Serve warm, garnished with fresh parsley.
