Vegan Sweet Potato Shepherd’s Pie

A hearty and comforting vegan shepherd’s pie made with sweet potatoes and a flavorful vegetable filling.

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup green peas
  • 1 cup corn
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon soy sauce
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then boil them in a pot of water until tender.
  3. In a skillet, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened.
  4. Add garlic, peas, corn, thyme, rosemary, soy sauce, and vegetable broth to the skillet. Cook for a few minutes until heated through.
  5. Drain the sweet potatoes and mash them with a bit of salt and pepper.
  6. In a baking dish, layer the vegetable mixture and top with the mashed sweet potatoes.
  7. Bake in the preheated oven for 25-30 minutes until the top is slightly golden.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like mushrooms or bell peppers.
  • This dish can be made ahead of time and reheated.
  • For a spicier version, add some chili flakes to the vegetable mixture.
