Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 bunch of kale, stems removed and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. In a large bowl, combine the chopped kale with the remaining olive oil and massage it for a few minutes until it softens.
  5. Add the roasted sweet potatoes, feta cheese, walnuts, and dried cranberries to the kale.
  6. Drizzle with balsamic vinegar and toss to combine.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
