Sweet Potato & Black Bean Quesadillas

Delicious and nutritious quesadillas filled with sweet potatoes and black beans, perfect for a quick meal.

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large bowl, combine the roasted sweet potatoes and black beans.
  5. Heat a skillet over medium heat and place one tortilla in the skillet.
  6. Sprinkle half of the tortilla with cheese, then add a portion of the sweet potato and black bean mixture.
  7. Top with more cheese and fold the tortilla in half.
  8. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  9. Repeat with the remaining tortillas and filling.
  10. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or onions.
  • Serve with salsa or guacamole for extra flavor.
  • These quesadillas can be made ahead and reheated.
