  • ½ cup unsweetened applesauce
  • ½ cup sugar-free vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup unsweetened almond milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the almond flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, then add the applesauce and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until smooth.
  5. Gradually add the almond milk until the batter is well combined.
  6. Pour the batter into the cupcake liners, filling them about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool before serving.
