Sugar Free Lemon Bars

Delicious and tangy sugar-free lemon bars that are perfect for a guilt-free dessert.

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup erythritol or other sugar substitute
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, and erythritol until well mixed.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
  4. In another bowl, whisk together the eggs, lemon juice, lemon zest, baking powder, and salt.
  5. Pour the lemon mixture over the crust in the baking dish.
  6. Bake for 20-25 minutes or until the center is set.
  7. Allow to cool before slicing into bars.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Store leftovers in the refrigerator for up to a week.
  • These bars can be frozen for longer storage.
