  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon strawberry extract
  • Pink food coloring (optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar (for filling)
  • 1/4 cup strawberry puree

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and continue beating until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites, adding vanilla and strawberry extracts, and food coloring if desired.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet.
  6. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.
  7. Bake for 15-20 minutes, then let cool completely.
  8. For the filling, beat softened butter and powdered sugar until creamy, then mix in strawberry puree.
  9. Pipe the filling onto half of the macarons and sandwich with the other half.
