  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in crushed tomatoes, broth, red pepper flakes, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  6. Stir in ricotta cheese until well combined.
  7. Serve hot, topped with shredded mozzarella and fresh basil.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
