4 Delicious Slow Cooker Stuffed Bell Peppers for a FallFeast

A simple and budget-friendly recipe for stuffed bell peppers cooked in a slow cooker, perfect for fall.

  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Cut the tops off the bell peppers and remove seeds.
  2. In a bowl, mix ground beef, rice, onion, garlic, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Stuff the mixture into the bell peppers and place them in the slow cooker.
  4. Cook on low for 6 hours or high for 3 hours.
  5. If using cheese, sprinkle on top during the last 15 minutes of cooking.
  6. Serve warm.
