A comforting and hearty slow cooker lasagna soup that combines all the flavors of traditional lasagna in a warm, delicious soup.

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic until fully cooked.
  2. Transfer the beef mixture to the slow cooker.
  3. Add crushed tomatoes, beef broth, Italian seasoning, and broken lasagna noodles to the slow cooker.
  4. Stir to combine and season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, stir in the ricotta cheese and half of the mozzarella cheese.
  7. Before serving, sprinkle the remaining mozzarella and Parmesan cheese on top and let it melt.
  8. Serve hot and enjoy!
