  • 2 cups rye flour
  • 1 cup all-purpose flour
  • 1 1/2 cups warm water
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp caraway seeds (optional)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine rye flour, all-purpose flour, salt, and caraway seeds.
  3. Add the yeast mixture to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
  7. Cover and let it rise again for about 30 minutes.
  8. Preheat the oven to 375°F (190°C).
  9. Bake the bread for 30-35 minutes or until the top is golden brown and sounds hollow when tapped.
  10. Let it cool on a wire rack before slicing.

Notes

  • For a denser bread, use more rye flour and less all-purpose flour.
  • Store the bread in an airtight container to keep it fresh.
  • This bread can be frozen for longer storage.
