Simple Garden Salad

Ingredients

  • 1 cucumber, sliced
  • 1 tomato, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and dry all vegetables.
  2. Chop the tomato, slice the cucumber and red onion, and shred the carrots.
  3. In a large bowl, combine the salad greens, cucumber, tomato, red onion, and carrots.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. Drizzle the dressing over the salad and toss gently to coat.
  6. Serve immediately.
