Roasted Parsnip & Apple Mash

A delicious and creamy mash made from roasted parsnips and apples, perfect as a side dish.

Ingredients

  • 2 large parsnips, peeled and chopped
  • 2 medium apples, peeled and chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup milk or plant-based milk
  • 1 tablespoon butter or vegan alternative

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chopped parsnips and apples with olive oil, salt, and pepper.
  3. Spread the mixture on a baking sheet and roast for 25-30 minutes until tender.
  4. Remove from the oven and let cool slightly.
  5. Transfer the roasted parsnips and apples to a mixing bowl.
  6. Add milk and butter, then mash until smooth and creamy.
  7. Adjust seasoning if necessary and serve warm.
