A nourishing roasted garlic detox soup that helps cleanse your body and boost your health.

Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 cup kale, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
  3. Roast the garlic in the oven for 30-35 minutes until soft.
  4. In a large pot, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened.
  5. Once the garlic is roasted, squeeze the cloves out of their skins and add to the pot.
  6. Add the vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 15 minutes.
  8. Add the kale and cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
  10. Blend the soup until smooth, if desired, and serve hot.

Notes

  • For a creamier texture, blend the soup with an immersion blender.
  • This soup can be stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables like zucchini or spinach.
