Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, mix together flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk together oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the cupcake liners about 2/3 full with batter.
  6. Bake for 20-22 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. For the frosting, beat together cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract.
  9. Frost the cooled cupcakes and decorate as desired.
