1 cup cooked quinoa
1 can black beans, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Instructions
Cut the avocados in half and remove the pit.
In a bowl, combine cooked quinoa, black beans, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper.
Scoop the quinoa and black bean mixture into the avocado halves.
