Quick Chickpea & Cucumber Salad

A refreshing and protein-packed salad with chickpeas and cucumber, perfect for a quick meal.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1/4 red onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large bowl, combine chickpeas, cucumber, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, add crumbled feta cheese.
