Pistachio cream desserts

Ingredients

  • 1 cup pistachios, shelled
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 tablespoon cornstarch
  • Pinch of salt

Instructions

  1. Soak the pistachios in water for at least 4 hours, then drain and blend until smooth.
  2. In a saucepan, combine the heavy cream, sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the sugar dissolves.
  3. In a separate bowl, mix the cornstarch with the milk until smooth.
  4. Slowly add the cornstarch mixture to the saucepan, stirring constantly until the mixture thickens.
  5. Remove from heat and stir in the blended pistachios until well combined.
  6. Pour the mixture into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • For a richer flavor, use roasted pistachios.
  • Garnish with crushed pistachios or whipped cream before serving.
  • This dessert can be made a day in advance for convenience.
