Pesto Salmon Pasta

A quick and delicious dish combining tender salmon with pesto pasta.

Ingredients

  • 8 oz salmon fillet
  • 8 oz pasta (penne or spaghetti)
  • 1/4 cup pesto sauce
  • 2 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season salmon with salt and pepper.
  3. Heat olive oil in a pan over medium heat. Add salmon and cook for 4-5 minutes per side.
  4. Remove salmon, flake into pieces, and set aside.
  5. In the same pan, sauté garlic for 30 seconds.
  6. Add cooked pasta, pesto, and lemon juice. Toss well.
  7. Gently mix in flaked salmon.
  8. Serve warm.

Notes

  • Use fresh salmon for best results.
  • Adjust pesto amount to taste.
  • Garnish with grated Parmesan if desired.
