1 head of cauliflower, cut into florets
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1 teaspoon dried Italian herbs (optional)
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, toss the cauliflower florets with olive oil, minced garlic, salt, pepper, and Italian herbs if using.
Spread the cauliflower mixture in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender.
Remove from the oven and sprinkle with grated Parmesan cheese.
Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes
