Ingredients

  • 2 tbsp olive oil
  • 4 chicken thighs, bone-in and skin-on
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Season chicken thighs with salt, pepper, and paprika.
  3. Brown chicken on both sides, then remove and set aside.
  4. In the same pot, sauté onion and garlic until soft.
  5. Add rice and stir for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Return chicken to the pot, cover, and simmer for 20 minutes.
  8. Remove from heat and let sit for 5 minutes before serving.
