Moroccan Spiced Carrot Dip

A delicious and vibrant dip made with spiced carrots, perfect for parties and gatherings.

Ingredients

  • 4 large carrots, peeled and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the chopped carrots with olive oil, cumin, coriander, smoked paprika, cayenne pepper, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
  4. Allow the carrots to cool slightly, then transfer them to a food processor.
  5. Add tahini and lemon juice to the food processor and blend until smooth.
  6. Taste and adjust seasoning if necessary.
  7. Serve with pita chips or fresh vegetables.

Notes

  • This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a creamier texture, add a little water or more tahini as needed.
  • Garnish with fresh herbs like parsley or cilantro for added flavor.
