Miso soup is a traditional Japanese soup made from miso paste, which is fermented soybean paste, and dashi, a Japanese stock. It is known for its rich umami flavor and numerous health benefits.

Ingredients

  • 4 cups dashi broth
  • 3 tablespoons miso paste
  • 1/2 cup tofu, cubed
  • 1/4 cup green onions, chopped
  • 1/2 cup seaweed (wakame), rehydrated

Instructions

  1. In a pot, bring the dashi broth to a simmer over medium heat.
  2. In a small bowl, mix the miso paste with a ladle of hot broth until smooth.
  3. Add the miso mixture back into the pot and stir well.
  4. Add the cubed tofu and rehydrated seaweed to the pot.
  5. Simmer for an additional 2-3 minutes.
  6. Garnish with chopped green onions before serving.

Notes

  • Adjust the amount of miso paste to taste.
  • For a vegetarian version, use vegetable dashi.
  • Can add other ingredients like mushrooms or vegetables as desired.
