Mezcal Smoked Chocolate Mousse

A rich and smoky chocolate mousse infused with mezcal for a unique depth of flavor.

Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 3 large eggs, separated
  • 50g granulated sugar
  • 30ml mezcal
  • 150ml heavy cream
  • Pinch of salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  2. Whisk the egg yolks with half the sugar until pale and thick.
  3. Fold the melted chocolate into the egg yolk mixture, then stir in the mezcal.
  4. In a separate bowl, whip the heavy cream to soft peaks and set aside.
  5. Whisk the egg whites with a pinch of salt until frothy, then gradually add the remaining sugar until stiff peaks form.
  6. Gently fold the whipped cream into the chocolate mixture, followed by the egg whites.
  7. Divide the mousse into serving glasses and refrigerate for at least 4 hours before serving.

Notes

  • Use high-quality dark chocolate for the best flavor.
  • Chill the mixing bowls and beaters for better whipped cream and egg whites.
  • Adjust the mezcal to taste if you prefer a stronger or milder smoky flavor.
