Mediterranean Quinoa Salad Lunch Box

A healthy and flavorful Mediterranean quinoa salad perfect for your lunch box. Packed with fresh vegetables, herbs, and a zesty dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it cool.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper. Pour the dressing over the salad and toss to combine.
  4. Divide the salad into lunch boxes and refrigerate until ready to serve.

Notes

  • You can add grilled chicken or chickpeas for extra protein.
  • This salad can be made a day ahead and stored in the refrigerator.
