Mediterranean Lentil Stew

A hearty and nutritious Mediterranean lentil stew packed with flavor and healthy ingredients.

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery, and sauté until softened.
  4. Stir in the minced garlic and cook for another minute.
  5. Add the lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  7. Adjust seasoning as needed and serve hot, garnished with fresh parsley.

Notes

  • Feel free to add other vegetables like spinach or bell peppers.
  • This stew can be stored in the refrigerator for up to 5 days.
  • It can also be frozen for up to 3 months.
