  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the crushed tomatoes, beef broth, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  5. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  6. In a separate bowl, mix the ricotta cheese with half of the mozzarella and Parmesan cheese.
  7. Serve the soup hot, topped with a dollop of the cheese mixture and the remaining mozzarella and Parmesan.
