Mango Chili Lime Salmon Tacos

Delicious and refreshing tacos made with grilled salmon, mango salsa, and a zesty chili lime sauce.

Ingredients

  • 2 salmon fillets
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 small corn tortillas

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
  3. Brush the salmon fillets with olive oil and season with salt and pepper.
  4. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
  5. Remove the salmon from the grill and let it rest for a few minutes.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Flake the grilled salmon and place it on the tortillas.
  8. Top with mango salsa and additional lime juice if desired.
  9. Serve immediately and enjoy!

Notes

  • For extra heat, leave the seeds in the jalapeño.
  • These tacos can be served with avocado slices or a dollop of sour cream.
  • Feel free to substitute the salmon with another fish or protein of your choice.
