Mamaw’s Chicken and Rice Casserole

A comforting and hearty casserole combining tender chicken, fluffy rice, and creamy sauce, baked to perfection.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, milk, frozen vegetables, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  6. Let the casserole cool for 5 minutes before serving.

Notes

  • You can use rotisserie chicken for added convenience.
  • Substitute cream of mushroom soup if you prefer a different flavor.
  • Add extra vegetables like broccoli or peas for more variety.
