Lasagna soup is a hearty and comforting dish that combines the flavors of traditional lasagna in a warm, savory soup form.

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and reduce heat. Simmer until noodles are tender, about 10-12 minutes.
  5. In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
  6. Serve the soup in bowls, adding a dollop of ricotta cheese on top and sprinkling with mozzarella and Parmesan cheese.
