  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or preferred sweetener
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, mix almond flour, cocoa powder, and erythritol.
  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold in the mascarpone cheese, vanilla extract, and salt into the whipped cream.
  4. Dip each almond flour mixture piece into the brewed coffee and layer it in a serving dish.
  5. Spread a layer of the mascarpone mixture over the coffee-soaked layers.
  6. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  7. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Make sure the mascarpone cheese is at room temperature for easier mixing.
  • Top with additional cocoa powder or chocolate shavings before serving for decoration.
