  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or preferred sweetener
  • 1/2 cup unsalted butter, melted
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pecans, chopped
  • 1/2 cup sugar-free chocolate chips
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, and erythritol.
  3. Add melted butter, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Press the mixture evenly into the bottom of the prepared baking dish.
  5. In another bowl, mix shredded coconut, chopped pecans, and sugar-free chocolate chips.
  6. Spread the coconut mixture evenly over the almond flour base.
  7. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown.
  8. Allow to cool completely before cutting into bars.

  • Store in an airtight container in the refrigerator for up to a week.
  • Feel free to substitute pecans with other nuts if desired.
  • For added sweetness, adjust the amount of erythritol to taste.
