  • 1/2 cup almond flour
  • 1/2 cup erythritol or preferred keto sweetener
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded coconut, almond flour, erythritol, and salt.
  3. In another bowl, whisk the egg whites until frothy, then add the vanilla extract.
  4. Pour the egg white mixture into the dry ingredients and mix until well combined.
  5. Using a cookie scoop or your hands, form small mounds of the mixture and place them on the prepared baking sheet.
  6. Bake for 15-20 minutes or until the macaroons are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
