  • 100g feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
  3. Toss the sweet potato cubes with olive oil, salt, and pepper.
  4. Spread them on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, or until tender and slightly caramelized.
  6. Remove from the oven and let cool slightly.
  7. Transfer the sweet potatoes to a serving dish.
  8. Drizzle with honey and sprinkle the crumbled feta cheese over the top.
