  • 4 large russet potatoes
  • 1 cup cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then prick them with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender.
  4. Remove the potatoes from the oven and let them cool slightly.
  5. Cut the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
  6. Add bacon, cheese, sour cream, green onions, milk, salt, and pepper to the potato insides and mix well.
  7. Stuff the potato skins with the mixture and place them back on a baking sheet.
  8. Bake for an additional 15-20 minutes until heated through and the tops are golden.
  9. Serve warm and enjoy!
