  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper.
  3. Spread the chickpeas on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
  4. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and roasted chickpeas.
  5. Top with feta cheese and fresh parsley, if using.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
