  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 teaspoon thyme

  • 8 slices of French bread
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions and sugar, cooking until the onions are caramelized, about 30 minutes.
  3. Pour in the white wine and scrape the bottom of the pot to deglaze.
  4. Add the beef broth and thyme, then season with salt and pepper.
  5. Simmer the soup for 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Place the French bread slices on a baking sheet and toast them in the oven until golden brown.
  8. To serve, ladle the soup into bowls, top with a slice of toasted bread, and sprinkle with Gruyère cheese.
  9. Broil the bowls in the oven until the cheese is bubbly and golden.
