  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and simmer for 10-12 minutes until noodles are tender.
  5. In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
  6. Serve the soup in bowls, adding a dollop of ricotta cheese and topping with mozzarella and Parmesan.
