Easy Keto Panna Cotta

A simple and delicious keto-friendly panna cotta that is perfect for satisfying your sweet tooth without the carbs.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/2 cup erythritol or preferred keto sweetener
  • 2 teaspoons vanilla extract
  • 2 teaspoons gelatin powder
  • 1/4 cup cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  2. In a saucepan, combine the heavy cream, almond milk, erythritol, and vanilla extract. Heat over medium heat until the mixture is warm but not boiling.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.
  5. Once set, serve chilled and enjoy your keto panna cotta!
