A warm and comforting chicken pot pie perfect for snowy days, filled with tender chicken, vegetables, and a flaky crust.

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 2 pie crusts (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add onions and cook until translucent.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth and milk, cooking until the mixture thickens.
  5. Add salt, pepper, garlic powder, and thyme. Stir in chicken, carrots, peas, and potatoes.
  6. Pour the filling into a pie crust in a pie dish.
  7. Cover with the second pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
  8. Bake for 30-35 minutes or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.

  • This dish can be made ahead and frozen before baking.
