Diabetic friendly zucchini muffins

Healthy diabetic-friendly zucchini muffins perfect for breakfast or a snack.

Ingredients

  • 1 cup grated zucchini
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 cup honey or sugar substitute
  • 1 egg
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients in a bowl.
  3. Stir in wet ingredients until combined.
  4. Fold in grated zucchini.
  5. Pour batter into muffin cups.
  6. Bake for 20-25 minutes.

Notes

  • Store in an airtight container for up to 3 days.
  • Replace honey with a sugar substitute if needed.
