Dairy-Free Lasagna

A delicious and healthy dairy-free lasagna that is perfect for those who want to enjoy a classic dish without the guilt.

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup dairy-free ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cups dairy-free mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the mushrooms, zucchini, and bell pepper until tender.
  4. In a bowl, mix the dairy-free ricotta cheese with chopped spinach, garlic powder, onion powder, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, sautéed vegetables, and a layer of dairy-free mozzarella cheese.
  7. Repeat the layers, finishing with a layer of noodles topped with marinara sauce and remaining mozzarella cheese.
  8. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly.
  9. Let it cool for a few minutes before slicing and serving.

  • Feel free to add other vegetables like eggplant or kale.
  • For extra flavor, add Italian herbs to the ricotta mixture.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
