  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss gnocchi, cherry tomatoes, bell pepper, zucchini, and red onion with olive oil, garlic powder, basil, salt, and black pepper on a sheet pan.
  3. Spread in a single layer.
  4. Roast for 20-25 minutes, stirring halfway, until gnocchi is crispy and vegetables are tender.
  5. Sprinkle with Parmesan cheese before serving, if desired.
