2 cups cooked chicken, shredded
1 cup shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1 tablespoon olive oil
1 teaspoon taco seasoning
1/2 cup diced bell peppers (optional)
1/2 cup diced onions (optional)
Instructions
In a bowl, mix the shredded chicken with taco seasoning, bell peppers, and onions.
Heat a skillet over medium heat and add olive oil.
Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
Add a portion of the chicken mixture on top of the cheese.
Fold the tortilla over to cover the filling and cook until golden brown, about 3-4 minutes.
Flip the quesadilla and cook the other side until golden and the cheese is melted.
Remove from the skillet and repeat with the remaining tortillas and filling.
Cut into wedges and serve with salsa or sour cream.
Notes
For extra flavor, marinate the chicken in lime juice and spices before cooking.
Feel free to add other vegetables like spinach or mushrooms.
These quesadillas can be made ahead and reheated in the oven.
