Creamy Cauliflower Alfredo Pasta

A delicious and guilt-free creamy cauliflower alfredo pasta that is both satisfying and healthy.

Ingredients

  • 1 medium head of cauliflower, chopped
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup almond milk
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste
  • 8 ounces pasta of choice

Instructions

  1. In a large pot, bring vegetable broth to a boil and add chopped cauliflower. Cook until tender, about 10 minutes.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Drain the cauliflower and add it to a blender along with sautéed garlic, almond milk, nutritional yeast, salt, and pepper. Blend until smooth.
  4. Cook pasta according to package instructions. Drain and set aside.
  5. Combine the pasta with the cauliflower sauce and mix well.
  6. Serve warm, garnished with additional nutritional yeast if desired.
