  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 2 limes (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Fresh cilantro (for garnish)

Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix coconut milk, lime juice, lime zest, garlic, ginger, soy sauce, cumin, paprika, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred chicken with forks and mix with the sauce.
  6. Garnish with fresh cilantro before serving.
