  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup provolone cheese, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, cucumber, bell pepper, black olives, salami, provolone cheese, and fresh basil.
  2. In a separate small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss well to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
