Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 avocado, diced
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the shredded chicken, chicken broth, diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  4. Serve hot, topped with tortilla strips, diced avocado, shredded cheese, and fresh cilantro.

  • For a spicier soup, add diced jalapeños or hot sauce.
